The purpose of this assignment to practice and integrate skills around food costing, pricing, establishing a standard recipe, pairing beverages with food, and making cocktails.
- Select an existing multi-ingredient beverage and add a new twist from the trends I share with you to it OR create a new mixed beverage that follows those trends.
- Develop a standard recipe for your beverage, cost it and price it
- Develop a title and menu descriptors for it.
- Find an appetizer that is a suitable pairing for the flavours in your beverage. The flavours in the food should enhance the beverage and vice versa.
- Post a video clip to Moodle in which you to show the class appropriate mise en place and process to build your beverage. You can use ‘fake’ labelled bottles in place of alcohol as I do not expect you to buy liquor to film your beverage making process. I do expect to see any other ingredients that you require. Note: it is possible to make a non-alcoholic multi-ingredient beverage.
Due: Friday March 15, 2019 in class (written portion) & on Moodle (video portion)
At minimum, your written and typed submission must include:
• A title page with the assignment title, your full name, your student number, our class code, your instructor's name, and the due date.
• A copy of the original recipe you based your beverage upon (copy & paste allowed)
• Note what trend you have decided to apply (from those I provide in class)
• A breakdown of ingredients’ flavours already present and those that add the ‘twist’
• A description of how the ‘twist’ will modernize/elevate/balance the flavour profile
• 1-page standard recipe for your cocktail. Include the recipe title, yield, ingredient list, the amount of each ingredient needed & the standard process to make it.
• 1-page costing worksheet (from class) that shows all product costs and where you sourced the products and prices from (i.e. Walmart). You will show your food and recipe costing (don’t forget your garnish!) and rough pricing for a 33% food cost. You will then use the rough price to determine your final rounded price for guests.
• A copy of the recipe that you have selected as a suitable appetizer that enhances the flavour of your beverage (copy & paste allowed). Explain how you arrived at this food selection and what exactly about it makes it an ideal match.
• 1-page that offers the title, menu descriptor and price of your beverage as if it was on a cocktail list. You will also include the title of your selected appetizer with a descriptor on this page. Ensure that your menu descriptors blends factual and sensory approaches together. You do not need to cost or price your appetizer.
At minimum your video posted to Moodle must include:
• An introduction to yourself, your cocktail, and the twist you have made to it
• Outline the ingredients and mise en place needed to prepare to build your beverage
• Show the steps, in order, to make your cocktail
• Close with your appetizer suggestion and why it is a perfect pairing.
• The video should be no less that 2 minutes and no more than 4 minutes
• No special editing is required. Just speak clearly, knowledgably, and enthusiastically about your ingredients, flavours, and food pairing.
Your assignment will be graded upon:
0-poor (not submitted)
2-fair (below expectations; not well executed)
4-good (meets expectations outlined; executed acceptably, minor errors or omissions)
6-excellent (exceeds expectations outlined; executed well, no errors or omissions)
Some categories are weighted higher as they are more important or require more effort.
