This is the history and concept of he restaurant:
In Tunisia we have this pastry shop who started as a little family shop sellin" rel="nofollow">ing some traditional sweets long ago. The son took over the busin" rel="nofollow">iness and now it became a
national well-known brand. It is one of the best (to not say THE best in" rel="nofollow">in Tunisia) and has shops all over the country.
After this success, the owner startin" rel="nofollow">ing exportin" rel="nofollow">ing his sweets. He opened a shop in" rel="nofollow">in France and then many of them all over France. It worked so well that he opened shops
in" rel="nofollow">in Dubai, London,...
So until now we are just talkin" rel="nofollow">ing about traditional tunisian sweets' shops.
As his busin" rel="nofollow">iness grew bigger and better, the owner added a new concept to his brand; and in" rel="nofollow">in collaboration with a very well-known, and appriciated in" rel="nofollow">in France, tunisian
Chef, they created this: A COUSCOUS BAR.
If you don't know it, the Couscous is a traditional tunisian dish that we prepare and serve durin" rel="nofollow">ing any big and happy occasion and even durin" rel="nofollow">ing the bad occasions too.
This dish has the specialty of bein" rel="nofollow">ing very healthy and consistant and it can be prepared in" rel="nofollow">in many different ways. It can be prepared with or without vegetables and with
red meat or chicken or fish.
So, back to this new concept, they opened a first shop in" rel="nofollow">in Marseille (France) and it was such a success that they opened one in" rel="nofollow">in Lyon also. Unfortunately, this one
didn't go so well.
For my thesis, I talked to this busin" rel="nofollow">inessman and he encouraged me to work on the implementation of his couscous bar here in" rel="nofollow">in Budapest.
So in" rel="nofollow">in the shop there will be main" rel="nofollow">inly a couscous bar but also a corner where we would sell the pastries and some tunisian spices and product he is also producin" rel="nofollow">ing.
