Scriptural material held in Old Testament

There are a wide variety of attitudes toward the laws the reader encounters in the Old Testament- There is particular disagreement between Jews and Christians about whether or not these regulations must still be observed- Not to mention other factors such as the fact that I am a lifelong Southerner who loves catflsh- Christians communities oflen maintain that laws such as the inability to eat fish without scales need not be observed- Jews, on the other hand, maintain that the Law stands at the very center of Scripture and constitutes the crux of Jewish religious life- What are some possible reasons for these divergent views on scriptural material held in common by both traditions? There is not necessarily a "right" answer here- Feel free to use the Old and New Testaments to help you generate a response
